
Chinese Shanxi noodles
Chinese Shanxi noodles is popular
among Chinese pasta.
Ingredients
500
g flour
80
g and

g lean pork bacon

onion

carrot Seasoning

tbsp chopped ginger

star anise seeds

pepper

tbsp of Sichuan
pepper powder

tbsp soy sauce clear

bay leaves

cloves of garlic and
1
tbsp chopped garlic
1
tbsp chopped chives
1
tbsp coriander 1 old vinegar

Steps Chinese Shanxi noodles:
Turn
the dough:
1.
Put the flour into a basin and dig a hole in the center.
2.
Slowly pour the water into the hole by putting the flour from the outside to
the inside.
3.
Mix the flour with the water in the hole to form flour flakes as grapes.
4.
Drill the remaining flour and gently pour water appreciated.
5.
Mix the water and the dry flour to form flakes of grapes.
6.
Knead the flakes with water pouring it on the dry flour gradually.
7.
Form a rough ball of dough, then cover it with a wet cloth. Then, rest for 30
minutes.
8.
Press the dough with your fingers sharply.
Knead
the dough:
1.
Place the dough on a well rested worktop.
2.
Take the top of the dough.
3.
Kneading the dough strongly by looping one end to the body.
4.
Turn the dough 90 degrees, knead again until it is soft and smooth. Lasser
stand for 10 minutes.
5.
Knead the dough and roll with the hand on the work plan.
6.
Roll the dough in the form of oval.
Cut
the dough:
1.
Take the dough with the left hand, knife in the right hand. The flank of the
knife and the dough surface must be in the same horizontal plane.
2.
Cut the dough gradually strip form.
3.
The noodles are thinner edge than the center as a willow leaf.
Make
the marinade:
1.
Wash and cut the bacon into cubes.
2.
Pour the sunflower oil in a pan, add the bacon. Fry over low heat.
3.
When the oil comes out of bacon and bacon is browned, remove the bacon, but
leave the oil in the pan.
4.
Peel the onion, wash and cut into pieces.
5.
Take the carrot, wash and peel. Then cut into pieces.
6.
Remove the root and rinse cilantro coriander.
7.
Place the onion, carrot and coriander in skillet. Sauté over medium heat for 1
minute. Remove and put aside.
8.
Add 2 bay leaves, 1 star anise, 2 small dried red chillies, seeds 8 Sichuan pepper, ginger 3
slices, 3 cloves of garlic in the pan, sauté over medium heat until the good
smell. Then, remove all but leave the oil in the pan.
9.
Put lean meat on a work surface, cut into cubes. Then, chop a little.
10.
Put the meat in the pan, sauté until the color change.
11.
Add the fried bacon.
12.
Add the chopped ginger, chopped chives and garlic. Fry until the aroma.
13.
Pour 1 tbsp Sichuan pepper powder 3 tbsp light soy sauce and 1 tbsp old
vinegar.
14.
Add sufficient water can cover the meat, 1 star anise, 2 small dried red
chillies and 2 bay leaves.
15.
Close the lid, cook on high heat. Bring water to a boil, then remove moss.
16.
Add the salt and mix well.
17.
Close the lid and cook over high heat. Then simmer over medium heat.
18.
After baking 30 minutes, the marinade is well done. Then add the marinade over
the noodles in a bowl. Pour It Up.
