Ingredients

tsp. tablespoon salt

ounces of distilled or boiled water

tsp. tablespoons Sichuan
pepper grains

cl of alcohol, Mou-tai (Chinese cognac)

sesame seeds, to serve

 

Preparation Chinese quail eggs

Put
the eggs in a pan of simmering water, boil

And
cook 3 minutes, until the yolks are soft without streaming. Remove eggs with a
slotted spoon

And
let cool.

In
a large saucepan, dissolve the salt in distilled or boiled water. Add pepper,
let cool and add alcohol.

 

Craquelez
eggshell without the peel. Put the eggs in a large sterilized jar and cover
completely with liquid. Close tightly and let stand at least 7 days in

 

A
cool, dark place.

To
serve, remove the eggs and liquid . Serve whole with sauce dip and a bowl
of toasted sesame seeds and cut each egg in half or quarters and serve as a
garnish.

Preheat
oven to 300. Press crumbs onto bottom & 1 1/2 up sides of 9 springfoam pan.
Beat cream cheese & sugar in large bowl at medium speed with electric mixer
until well blended. Add eggs, one at a time, mixing well after each addition.
Blend in vanilla; pour over crumbs. Bake 1 hour 30 minutes. Loosen cake from
rim of pan; cool before removing rim. Chill thoroughly. Top with fruit.

Cake with Yeast Preparation

 

Preheat
oven to 350. Grease and flour September 2 round pans. Dissolve yeast with 1
teaspoon sugar 1/4 cup warm water in. Dissolve baking powder in 3 Tablespoons
hot water. Sift flour, baking powder and salt. Cream butter and sugar. Add
yolks, chocolate and yeast. Mix well. Alternately add flour mixture with milk.
Add baking soda mixture and vanilla. Beat Until Smooth. Fold in stiffly beaten
egg whites. Into Prepared for socket. Bake for 45 minutes.
